Summer is bursting with festivities! It is so fun to attend potlucks, family gatherings and celebrations in the summer. If you’ve ever found yourself feeling scrambled while trying to think of something to contribute to a shared meal – look no further!

Picking the best watermelon will go a long way in making this watermelon salad extra sweet and tasty! Here are some quick tips for picking a good watermelon:

Watermelon feta salad is a great dish because it is light and can pair well will many different food items. In particular, the sweetness of the watermelon salad is balanced well with strong and savory meat dishes. Think grilled chicken, pulled pork, steak, brisket and hamburgers!
I love how versatile this salad is. Its versatility makes for an amazing crowd-pleasing potluck dish that everyone will enjoy!

Watermelon Feta Salad is best enjoyed fresh! I like to add all of the ingredients together shortly before it gets served. The salad will still taste good if made ahead, but the colours might not be as vibrant (the feta cheese may take on more of a pink colour the longer it marinates).
If you want to do some prep ahead, I would recommend chopping the watermelon, cucumber and mint. Mix it all together and set in the fridge until you’re ready to assemble the rest before serving.
You can keep any leftovers in the fridge and enjoy it for 1-3 days afterwards!

You can freeze watermelon salad but I wouldn’t recommend it! This salad definitely tastes best fresh when mixed together!
That being said, you can freeze all of the ingredients separately if you have leftovers and want to avoid waste! Watermelon, mint, cucumber, feta and lime juice can be frozen for 1-3 months.
To make this watermelon salad from frozen, take the ingredients out the freezer to de-thaw about an hour before using. Once de-thawed, assemble the salad as per the recipe directions.

All you will need to assemble this salad is a measuring spoon/cup, a cutting board and a knife for chopping your ingredients. Serve in your favourite serving bowl with your favourite slotted spoon (to avoid scooping extra juice!). Told you it was easy!
