Baked Burrito Bowls
This simple dish is full of protein, fibre and veggies. It makes an excellent crowd-pleasing meal that leaves everyone feeling full and satisfied.

- 1 tbsp butter
- 1 small onion
- 1 bell pepper chopped
- 1 tsp minced garlic
- 2 tbsp chili powder
- 1 tsp garlic powder
- 1 tsp cumin
- 1/2 tsp oregano
- 1/2 tsp salt
- 1 cup corn frozen
- 1 (14oz) can black beans strained and rinsed
- 6 cups shredded chicken pre-cooked
- 2 cups chicken broth
- 2 tbsp tomato paste
- 1 cup cheese grated
- 1 1/2 cups basmati rice pre-cooked
Toppings for Serving
- Avocado
- Green Onion
- Salsa
- Sour Cream
- Cilantro
- Lime juice
Preheat oven to 400°F.
In a large pan melt butter and sautée onion and bell pepper until soft. Add garlic and cook until translucent.
Add corn, black beans, tomato paste, chicken broth and spices. Cook at medium-high heat for 5 minutes.
Spoon rice into a 9x13 baking dish (or casserole dish). Mix in shredded chicken. Add the pepper, black bean and corn mixture. Top with shredded cheese.
Bake for 30 minutes. Remove from oven and let cool for 5-10 minutes.
Serve with toppings of choice.
